This is a very popular dessert around my house. My daughter and I always bake together so she was excited to help me with this video. It may seem like a lot of steps but it is actually pretty quick and easy to make. Try using different flavors of cookies in the cake like peppermint, ginger snaps or chocolate chips. Use a box of yellow cake mix but for this recipe, do not follow the ingredients on the back of the box.
Cook time: about 1 hour from start to finish
Serves about 8-10
1 Box of yellow cake mix
3 Eggs
2/3 Cup of Oil
2/3 Cup of Water
1 Package (15.5 ounce) of Cookies
1 Pint of Heavy Whipping Cream
Start by crushing 26 cookies into small pieces
Next, add yellow cake mix, oil, water, eggs and 1 cup of crushed cookies to a bowl. Mix until blended together.
Spray 2 round cake pans with non stick spray or wipe with oil.
Divide the cake batter into both pans and bake on 350 degrees for about 20 minutes.
Meanwhile, you can get a large bowl and put the pint of heavy whipping cream in it. Start on low with a hand mixer and gradually increase the speed. Mix until cream is thick, about 4 to 5 minutes.
Once thick, add 1 cup of crushed cookies to the cream and stir in.
Once the cakes are cooled, cut each one in half.
Place on piece on the serving dish and spread a thin layer of the cream on top.
Next, place another half of cake on top and cover with cream.
Continue until you have 4 layers of cake.
With the remaining cream, cover the entire cake (sides and top).
Take the rest of the crushed cookies (about 1 cup) and spread on top of the cake.
Cut about 10 cookies in half and layer around the bottom edge of the cake.
Serve.
