Recipe for Fresh Fruit Salad



This is a great recipe; it is healthy and tasty. I use the fresh fruit to make this dish naturally sweet! It is very refreshing on a hot summer day. This does not last long at my house, we all love it! You can use any fruit that you like. The lemon helps the fruit keep it's color and not turn brown.

Prep Time: about 10 minutes
Serves: about 8-10 servings

1 Pint of Strawberries
3 Peaches
3 Nectarines
2 Cups of Blueberries
2 Cups of Grapes
2 Cups of Watermelon
2 Oranges
1 Lemon

Peel and cut up all the fruit.

Squeeze the oranges and lemon in to a dish. Remove any seeds that fall into the juice.

Add all the remaining fruit into the juice.

Stir well.

Serve, For a juicer fruit salad, refrigerate for at least 1 hour before serving.

Recipe for Eggs with Tomato Sauce


I am not sure if this is an actual Somali recipe or not. I have seen a lot of Somali's make this for breakfast and it is very quick and easy. It is really nice if you serve it with french bread, sabaya, anjera or toast.

Cook Time about 7-10 minutes
Serves about 2


4 Eggs
1/2 Cup of Tomato Sauce
1/4 Cup of Chopped Green Peppers
1/4 Teaspoon of Salt
1 Tablespoon of Oil
Pinch of Chili Powder (optional)


Add the oil to a non-stick pan on medium high heat.

Once the oil is warm add the peppers and cook until soft.

Add the eggs, tomato sauce, salt and chili powder (if using). Stir well and make sure all the eggs are stirred through.

Turn the pan up to high heat and continue to stir until the egg is cooked all the way and any liquid is absorbed.

Serve.
