Recipe for Rice Pilaf

This is  a homemade recipe that I have been using for awhile now. I like using different frozen vegetables every time.  My husband said he loves this rice because he feels like he is being healthy when he eats it because it has veggies in it! haha.

Cook time: 10-15 minutes
Serves: 4

2 Cups of Rice
4 Cups of Water (boiling)
1 Chicken Cube
1 Cup of Chicken
1/4 Teaspoon of Black Pepper
1/2 Cup of Frozen Peas
1/2 Cup of Frozen Corn
1/2 Cup of Frozen Lima Beans
1/3 Cup of oil

Start by boiling water.

While water is starting to boil, add oil to a pan and let it heat up

Add chicken and cook until done

Add corn, peas, lima beans, chicken cube and black pepper.

Stir until chicken cube is dissolved.

Add rice and cook on high for 2 minutes, stirring often.

Add boiling water and stir. Cover and cook for 3 minutes.

Turn heat down to medium low (about a 4) and simmer rice for 3 more minutes.

Stir and make sure rice is not sticking, let cook for 2-3 more minutes.

Stir and check rice to see if it is done. If it is still crunchy let it cook for 1 more minute or until done.
