Recipe for Salsa Chicken



I made this recipe one night for my husband and he loved it. I usually make Chicken Parmesan but my husband thinks it is too bland. One night I had a bottle of salsa and decided to try a new dish using it. My husband asks me to make this at least once a week. I started serving it when we had guests come over and I have had a lot of requests for the recipe so here it is! I hope you enjoy it as much as we do.


Cook Time: 1 Hour
Serves: 4

1 1/2 pounds of chicken breast
1 Egg
1 Cup Italian Style Bread Crumbs (can be found near the flour in the grocery store)
4 Cups of Salsa (can be found in the grocery store)
1/4 Cup of Oil


Spray baking pan with nonstick spray and add salsa to it. Set aside.

Wisk egg until smooth.

Dunk a piece of chicken into the egg and coat well, flip it and cover other side of chicken also.

Then Dip chicken into the bread crumbs and coat each side well.

Place the chicken into a pan with preheated oil.

Cook for a minute or 2, just until bread crumbs are brown.

Place chicken in a pan with the salsa.

Repeat until all the chicken has been covered with bread crumbs and browned.

Put foil over the pan and bake on 400 degrees for 45 minutes.

Take foil off the pan and cook an additional 15 minutes.

Serve.
