Somali Recipe for Potatoes with Peppers

This is a nice and quick recipe. I have seen it made a few different ways (no onions, red food coloring, etc). I love potatoes so this is one of my favorite recipes. It goes great with rice or bread/anjera.

Cook time: about 10-15 minutes
Serves: 2-3

2 Potatoes that have been boiled until almost done and sliced like french fries
1/4 Cup green peppers
1/2 Onion
1/2 Chicken cube
1/4 Teaspoon of Salt
1 Cup of Water
1/8 Teaspoon of Yellow food coloring powder
2 Tablespoons of Oil

Add oil to a pan on medium-high heat.

Add onions and fry until soft.

Add Potatoes and cook for 2 minutes. This helps the potatoes from getting mushy.

Add remaining ingredients- peppers, salt, chicken cube, food color and water.

Stir gently

Cover and cook on medium for about 10 minutes.

Make sure potatoes and peppers are soft.
