Somali Pasta Sauce with Vegetables



This is a nice recipe, it can be eaten with many things. Mostly it is eaten with spaghetti but it can be eaten with white rice, bread or anjera. It's a good recipe to get it started and let it simmer while you do other things.


Cook Time about 1 hour 10 minutes
Serves about 4-5 people



1 Cup of Suqaar Meat
1/4 Cup of Oil
1 Teaspoon of Coriander Powder
1 Teaspoon of Cumin Powder
1/4 Teaspoon of Chili Powder (optional)
3/4 Cup of Chopped Carrots
3 Cups of Chopped Potatoes
1 Tomato cut in Chunks
1 Chicken Cube
1/2 Teaspoon of Salt
1 Cup of Pasta Sauce
2 1/2 Cups of Water (more may be needed)
1 Large clove of Garlic (smashed)
1 Tablespoon of Cilantro (smashed)


Boil the meat for about 30 minutes, drain.

Add the oil and Onions and cook on medium high until onions are tender.

Add the tomato and cover. Cook until dissolved, about 2 minutes.

Add the Chicken cube and stir until dissolved.

Add the Cilantro and Garlic, cumin powder, coriander powder and salt. Stir well.

Add 1 cup of water, stir.

Add the carrots and potatoes and the remaining water.

Cover and bring to a full boil.

Stir and reduce heat to medium low and simmer for 15 minutes.

Stir and make sure it is not sticking. Cover and cook for an additional 15 minutes.

Stir and make sure it is not sticking. The vegetables should be cooked. Let it boil for 5-7 minutes to reduce some liquids.

Serve.
